Chef Thomas Illouz opens the doors to his world: a sincere, seasonal cuisine where the flavours of his native Mediterranean meet the richness of the Auvergne terroir.

"Originally from Avignon, I grew up surrounded by the flavours of the Mediterranean. Citrus fruits, aromatic herbs, spices and olive oil naturally shaped my cooking and the way I work with ingredients. Now settled in Bellerive-sur-Allier, I have chosen to bring these Mediterranean influences into dialogue with the richness of Auvergne. I cook raw, mostly regional produce, reinterpreting it with precision and sensitivity to offer a gastronomic experience that is sincere, clear and deeply rooted in the seasons. After working as sous-chef alongside Julien Allano at Le Clair de la Plume (1 Michelin star), I joined Château du Bost in 2020 as Head Chef. I became a partner in 2023 alongside Stéphane Roesch. When he left in June 2026, I took over the reins of Château du Bost to write my own story." This adventure is, above all, a team story. In the kitchen as in the dining room, everyone brings their own standards, commitment and sensitivity to keep this house alive. Together, we share the same wish: to welcome our guests with sincerity and offer them an authentic, warm and memorable gastronomic experience.
